A concern that pops up in all our mind while decorating a cake is whether to choose a fondant or gum paste. Well, both these can be used to decorate a cake, but there is always a two times need to know what these confectionary concoctions really are?
Fondant is a pliable, icing that is chewy but tastes yummy. It is generally made from a mixture of gelatin, water, sugar and glycerine. It can be shaded with any color, according to our requirement. It is super easy to roll it and work with. It is mostly used to cover cakes and cupcakes, as it gives a smooth, porcelain-like appearance to the cake. Different shapes can be cut out from the fondant or it can be molded into shape for decorating, as long as it will lie flat against the cake. Fondant is flexible, so it doesn’t hold its shape. Fondant is not really recommended for molding 3-D figures. But it can be used to make ribbons so that it can be put on a cake and it will have that natural wavy texture.

Gum paste is similar to fondant, save for the eggs whites it is made from not gelatin. Gum paste is even pliable and smooth, but it gets hardened up fastly. So it is ideal to be used on bigger cakes. It can be rolled thin and can be hand molded to form flowers, bows and other figures. It should never be used to cover a cake. It can be colored using gel or paste edible coloring. It should be kept tightly wrapped up, while you are not working.
