The company change their method in 1950s when they still racked their beer into wooden casket that change in the late 1050s and early 1960s, because they start to develop a keg brewing system with aluminum kegs to replace the wooden casks named iron lungs.

About Guinness Extra Stout
Taken from Guinness, the Extra Stout is the one that was made from original recipe from 1821 and has a sharp, crisp taste that differ from Draught with its creamy taste. The drink embodied Guinness original’s color as its taste. The crisp barley is cutting through the hops and will draw the drinker in with a bold flavors that lingers in your mouth. In aroma, it is medium and balanced with a roast character and subtle fermentation fruitiness. If it is named as original, the beer will likely have 5% ABV while if its name Extra Stout, it will usually have 4.5% ABV depending on where you live.
About Guinness Draught
At the other hand, Draught comes in a distinctively black color with a rich and creamy flavor. It is sweet smelling with coffee and malty nose as well as has velvety finish, which described by Guinness as harmony. The sweet hint will then counters with the bitter taste in drinker’s mouth to complement the malt and the based roasted barley. This version is said to be developed in 1959 when they celebrated Arthur Guinness 9000-year lease to mark their 200 years of groundbreaking brewing.
Draught is carbonized with nitrogen gas and carbon dioxide. This change of using nitrogen in the carbonation process in probably the biggest change done by the company up until now. The change of nitrogen fundamentally give their beer a different texture and flavor compare with the company’s previous beers that only used carbon dioxide. The nitrogen gives the beer a creamier and smoother texture. The movement was taken after a mathematician called Michael Ash that discover a mechanism to make the application possible.
As we know, Nitrogen is less soluble than carbon dioxide, so it will allow the beer to be put under high pressure without making it fizzy. The high pressure is needed to push the beer through a fine holes in a plate in the tap to create “surge” characteristic.
Now, let’s compare Guinness Extra Stout with Draught. As it has been mentioned earlier the basic difference between these two is in the carbonation side because we know that Extra Stout is carbonated with carbon dioxide to give the beer it’s distinct acidic and rather strong taste at the other hand, Draught is even though it doesn’t comes from keg or cask but in a can is carbonated with a combination of carbon dioxide with nitrogen, so it can have that smooth and creamy texture while also less acidic.
