The main difference between kettle chips and regular chips is the processing method. Kettle chips are potato chips that are processed in batches. The batch method is, in fact, the method that was primarily used to produce potato chips before the invention of big processing facilities. In this way, when a new batch of potatoes is added, the temperature of the oil drops. As the effect, the potatoes take slightly longer to cook, allowing the starch to absorb more moisture and dissolve. Some have argued that the higher temperature may oxidize the cooking oil, causing the forming of free radicals that go along with the potato chips. However, the amount is small and pretty insignificant.
