Potato chips are processed continuously and the oil is kept very hot. As the effect, the moisture in the potatoes evaporates immediately, and the produced potato chips are light, thin, and crispy. Some have argued that the higher temperature may oxidize the cooking oil, causing the forming of free radicals that go along with the potato chips. However, the amount is small and pretty insignificant.
